Fiesta Nacho Sausage Muffins

Happy Wednesday, friends! I hope you are all enjoying what’s left of summer break and your kids aren’t making you prematurely grey headed. My kids are awesome but I’m literallly counting down the days to school starting! I’ve run out of energy entertaining my kids all day, every day:-) Since I’m void of life by dinner time during the summer, I love recipes like these Fiesta Nacho Sausage Muffins. They are easy, fast, tasty, and cheap. If you need a quick dinner side dish, or a perfect soup side, try this one. Enjoy!

I’ve taken these to a couple parties and folks usually request the recipe. True taste bud rewards right here:-)

Fiesta Nacho Sausage Muffins
Adapted from:


  • 1/3 lb. ground sausage
  • 1/3 tsp onion powder
  • 1 Box Jiffy corn muffin mix
  • 1/3  can condensed fiesta nacho cheese soup (10.75 oz)
  • 3/4 cup shredded Cheddar cheese
  • 1/4 cup milk

  • Preheat oven to 375.
  • Cook sausage and onion powder in a large skillet over medium to med-high heat, stirring until sausage crumbles and is no longer pink. Drain.
  • Combine sausage, baking mix, and shredded cheese in a large bowl. Make a well in the center of the mixture.
  • Stir together soup and buttermilk; add to the middle of the sausage mixture, stirring just until dry ingredients are moistened.
  • Spoon until lightly greased muffin tins, filling to tops of cups. Bake for 15-18 minutes or until lightly browned.

This recipe makes 6 full-size muffins or about 12 mini-muffins. You can easily triple this recipe and the ingredients if you want to make a larger batch. We’ve found that 6 full-size muffins work well for our family dinner meal, but the mini muffins work well for a party.

Hang in there people. 2 weeks until school starts. 2 WEEKS. The realm of parents will simultaneously rejoice the second week in August.
