Easy Cheesy Broccoli & Rice

I can’t tell you how glad I am that Wednesday is here already. My son only has 4 more days at home for summer break and then school starts and I will be doing a gleeful dance with my 4 year old daughter all over the house! I don’t know about you, but I am so relieved to be getting back into our regular routine. If you’re looking for a new easy recipe for your meal planning this fall, here’s a winner I made last week. It’s a quick and easy side dish, especially after a long day at work. It’s sure to please your little ones and your big ones (by big ones, I’m talking about Ryan). 

Easy Cheesy Broccoli & Rice

Ingredients

  • 4-6 cups fresh broccoli florets
  • 1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
  • 2 cups instant white rice uncooked
  • 1/2 lb. (8 oz.) VELVEETA® cut into 1/2-inch cubes
  • 1.5 Tbsp. butter
  • 15 RITZ Crackers crushed
  • 2 Tbsp. KRAFT Grated Parmesan Cheese

Directions

  • Preheat oven to 350 degrees
  • steam broccoli florets on medium heat in large skillet with small amount of water (add seasoning of your choice)
  • Once broccoli is tender, add chicken broth and bring to a boil
  • Stir in rice & remove from heat. Cover & let sit 5 minutes.
  • Stir in velveeta cheese cubes
  • In a separate small skillet, melt butter. Add crushed crackers & stir until combined. Spoon over top of broccoli/cheese/rice mixture
  • Place large skillet in oven for 10-15 minutes at 350 degrees, or until warmed through & velveeta is completely melted
  • Sprinkle with parmesan cheese
