Parmesan Garlic Chicken

Parmesan Garlic Chicken recipe

I hope you’re having a great week! Not sure about you, but by Wednesday I’m totally over making dinners already. If you need a quick and easy main dish that only uses a couple pieces of chicken to feed a family of 4, this is the recipe for you! The ingredients are pretty cheap and easy to find. It only takes a few minutes to throw together and it tastes great! We usually only eat chicken or beef main dishes at home, so I am constantly on the lookout for ways to mix-up our meal plan and offer some variety. There are only so many ways to cook chicken:-) I hope you enjoy this one!

Sometimes I look at my meal plan and think…NOT ANOTHER CHICKEN DISH! Of course, we will be eating mostly chicken and beef until our house is paid off. Maybe then we’ll branch out to fish. Lol. I like this easy take on a basic baked chicken. If you’ve got an awesome easy/cheap chicken dish, please share! :-)

Parmesan Garlic Chicken

Since we try to cook and eat as frugally as possible, I will often just use 2 boneless skinless chicken breast halves with this (and many other recipes) and I divide them into 4 pieces of chicken by cutting each chicken breast  in half length-wise. This creates 4 thinner pieces of meat that cook in less time. It also allows more flavor to coat each piece and we’ve found it to be enough to feed all 4 of us when paired with a vegetable or other side dish. This is a great way to save money and cut down on portion sizes! :-)
